Grilled Garlic Bruschetta

Yield: 4-6 Servings

Ingredients
4-6 tomatoes, chopped and de-seeded
6 cloves garlic, minced + 1 clove garlic sliced in half
2 cups basil, chopped
1 teaspoon salt
½ teaspoon pepper
Olive oil for drizzling
Baguette
Optional:  freshly grated parmesan or asiago cheese

Method

1.  In a medium sized bowl, toss together chopped fresh tomatoes with minced garlic, chopped basil, salt and pepper.  Drizzle in a little olive oil.  Set aside.

2.  Slice a baguette on the bias and drizzle with oil. Toast on a grill or grill pan until marks are noticeable.

3. Using the sliced garlic, rub the toasted bread with the cut side of the garlic clove.

4. Drizzle the bread with a bit of oil again top with tomato mixture.

5. Optional to sprinkle a bit of cheese for garnish and a more rich flavor.
